Remove stems from dried figs and cut each fig into quarters. Place in a large bowl and cover with 600ml warm water. Let soak for 2-3 hours until figs are plump and soft to touch. Do not drain the soaking liquid as it contains valuable flavor and will be used in cooking.

Start cooking base
Transfer soaked figs and all soaking liquid to a heavy-bottomed saucepan. Add sugar, cinnamon stick, and whole cloves. Heat over medium heat for 3-4 minutes, stirring gently until sugar dissolves completely. Do not let mixture boil rapidly at this stage.

Initial boiling phase
Increase heat to medium-high and bring mixture to a rolling boil for 5-6 minutes, stirring occasionally. The mixture will foam up considerably and smell very sweet. Do not leave unattended as it can overflow quickly.

Reduce and simmer
Lower heat to low-medium and simmer gently for 25-30 minutes, stirring every 5 minutes. The figs will break down partially and the liquid will reduce by about half, turning deep amber. Do not stir too vigorously or figs will completely break apart.

Stir in lemon juice and lemon zest. Continue cooking over low heat for 8-10 minutes until jam coats the back of a wooden spoon and drops in thick ribbons. The jam should look glossy and thick. Do not cook too long or it will become overly thick when cooled.

Remove cinnamon stick and cloves. Test consistency by dropping a small amount on a cold plate - it should hold its shape but still be spreadable. Let cool for 5 minutes before transferring to sterilized jars. Do not seal jars while jam is still hot to prevent condensation.
