The seeds should release easily and make a tapping sound when they hit the bowl. Do not press too hard or you'll crush the delicate seeds.

Extract juice manually
Place 2 cups of pomegranate seeds in a fine-mesh strainer over a bowl. Press and mash the seeds with the back of a large spoon for 5-7 minutes, applying steady pressure. The seeds should release their bright red juice and become pale. Do not over-mash or you'll extract bitter tannins from the white pith.

Strain thoroughly
Pour the extracted juice through a fine-mesh strainer lined with cheesecloth into a clean pitcher. Press the pulp gently with a spoon for 2-3 minutes to extract remaining juice. The liquid should be clear and bright red without any seed fragments. Do not force the pulp through the strainer or the juice will become cloudy.
