Add yogurt, 2 tbsp olive oil, and salt to the yeast mixture. Gradually mix in the flour using a wooden spoon until a shaggy dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Do not add too much flour or the bread will be dense.

Place the dough in an oiled bowl, cover with a damp towel, and let rise in a warm place for 60-75 minutes until doubled in size. The dough should spring back slowly when gently poked. Do not let it over-rise or the texture will be compromised.
