Koruk şerbeti is one of Turkey's most cherished traditional beverages, particularly popular in regions where grape cultivation thrives. This ancient drink transforms unripe grapes (koruk) into a refreshing elixir that has been enjoyed for centuries across Anatolia. The magic of koruk şerbeti lies in its perfect balance of tartness and sweetness. The unripe grapes provide a natural acidity that awakens the palate, while the added sugar creates harmony without masking the fruit's distinctive character. When properly prepared, the drink has a gorgeous pale green hue that's as visually appealing as it is delicious. The aroma is fresh and grape-forward with subtle herbal notes, reminiscent of walking through a vineyard in early summer. Each sip delivers a burst of coolness followed by a pleasant pucker that cleanses the palate beautifully. The texture is light and refreshing, never heavy or cloying. This beverage is traditionally served during hot weather as a natural coolant and digestive aid. It's commonly enjoyed during afternoon gatherings, after meals, or as a welcome drink for guests. The natural acidity makes it an excellent palate cleanser and a sophisticated alternative to commercial soft drinks.

Ingredients

Instructions

  1. Clean the grapes

Remove all unripe grapes from their stems and rinse thoroughly under cold running water. Pick out any damaged or overly soft grapes, keeping only firm, green ones. Pat dry with clean kitchen towels and let air dry for 2-3 minutes until completely moisture-free. Do not use overripe or yellowing grapes as they will affect the tartness.

  2. Extract grape juice

Place the clean grapes in a large bowl and crush them thoroughly with a potato masher or wooden spoon for 3-4 minutes until all grapes are broken and juicy. The mixture should look pulpy with visible grape skins floating in green juice. Do not blend or process mechanically as this will create too much foam.

  3. Strain the mixture

Pour the crushed grape mixture through a fine-mesh strainer lined with cheesecloth into a clean bowl, pressing the pulp gently with the back of a spoon for 2-3 minutes. The strained juice should be clear pale green without any solid particles. Do not press too hard or the juice will become cloudy.

  4. Prepare sugar syrup

In a small saucepan, combine water and sugar over medium heat, stirring constantly for 2-3 minutes until sugar completely dissolves. The syrup should be clear and slightly thickened. Remove from heat and let cool to room temperature for 10-15 minutes. Do not let the syrup boil or caramelize.

  5. Mix and chill

Combine the strained grape juice, cooled sugar syrup, and lemon juice in a pitcher, stirring gently for 1 minute until well blended. Refrigerate for at least 2 hours until completely chilled and flavors meld together. The mixture should taste balanced between tart and sweet. Do not add ice directly to the pitcher as it will dilute the flavor.

  6. Serve cold

Fill glasses with ice cubes and pour the chilled koruk şerbeti over the ice. Garnish each glass with 1-2 fresh mint leaves and serve immediately while very cold. The drink should have a beautiful pale green color and fresh aroma. Do not let it sit at room temperature for more than 10 minutes before serving.

Cooking Tips

For the clearest juice, let the strained mixture settle in the refrigerator for 30 minutes before the final pour, leaving any sediment at the bottom of the container.

Alternatives

If unripe grapes aren't available, substitute with green gooseberries or unripe white grapes, though the flavor will be milder and less traditionally authentic.
